Happy Thanksgiving

Tough economic times are hitting most of us pretty hard.  This is especially noticable when it’s time to buy groceries for our traditional Thanksgiving dinner.    

I’ll have to cut back on the number of side dishes and desserts we serve to our family and friends but I’m thankful that we’ve still got a warm place to gather to share our traditional Thanksgiving meal. 

Because gas prices have gone down, we’ll have 2 less at our table this year.  Our neighbors have decided to DRIVE to their hometown and celebrate Thanksgiving with their family.  We’ll miss them but are thankful that they can enjoy some holiday time with their family. 

It’s easy to complain when times are hard.  But Thanksgiving is a good time to keep in mind that regardless of how bad things are for us, that there is always someone somewhere that is less fortunate.  The good things in our lives can be as simple as the love of our family,friends or pets or a warm meal.  If we take the time to appreciate some of the good things in our lives hopefully this can help us cope with the bad times.

Holiday Recipe – Pumpkin Roll

Pumpkin Roll

3 eggs

2/3 Cup canned pumpkin

1/2 teaspoon cinnamon

3/4 Cup self-rising flour

1 Cup sugar

Filling 

8 oz. cream – softened

2 teaspoons butter

1 teaspoon vanilla

1 Cup powdered sugar

Pre-heat oven to 350.  Grease jellyroll pan and line with wax paper.

Mix pumpkin ingredients until smooth and put in pan.  Bake 15 minutes.  Remove from oven and sprinkle with powdered sugar.  Flip onto dish towel, remove waxed paper and sprinkle with powdered sugar.  Roll up into dish towel.

Let cool.  Spread filling, roll back up without towel.
